Green Apple Smoothie by Stacey Antine, MS, RD

Wow! Who knew these ingredients would give your mouth such a great tasting apple sensation! Blended together, the avocado and coconut water provide healthy fat for our bodies, and the sweetness of agave nectar provides the natural sugar we love! Go green with this yummy, energizing smoothie. Kids love it!


Ingredients: 2 cups coconut water, natural 1 Granny Smith apple, cored, skin on, frozen 1 avocado, ripe 1 teaspoon peppermint leaves, fresh 1 teaspoon lime juice, fresh 1 tablespoons agave nectar


Directions: 1. In a blender, add coconut water and then, pulse frozen apples until crushed thoroughly. 2. Add remaining ingredients in the blender and push the blend button until well mixed. 3. Pour equally into four, one cup, servings and enjoy!


Makes approximately 4 (1 cup) servings.


Nutrition Facts per serving: 150 calories; 7g fat (1g sat fat, 5g mono, 1g poly, 0g trans fats); 0mg cholesterol; 22g carbohydrate (5 fiber, 15g sugar); 2g protein; 25mg sodium; 2% Daily Value (DV) vitamin A; 15% DV vitamin C; 2% DV calcium; 2% DV iron.
